Ingredients
1 pound asparagus, trimmed
2 teaspoons extra-virgin olive oil 11⁄2 cups halved grape tomatoes
1⁄2 teaspoon minced garlic
2 tablespoons balsamic vinegar
3 tablespoons crumbled goat cheese 1⁄2 teaspoon black pepper
*add mushrooms & onions for added flavor as desired
Preparation
Cook asparagus in boiling water for 2 minutes or until crisp-tender; drain. Heat olive oil in a large skillet over medium-high heat. Add tomatoes and garlic and cook 5 minutes. Stir in balsamic vinegar and cook 3 minutes. Serve asparagus on platter; topped with tomato mixture, cheese and pepper if desired.
